Peanut butter Fudge!
This is the perfect treat this time of year, its good to have the balance of healthy treats and not so healthy goodies.
If you want to avoid over indulging on the sugar-loaded snack I have the perfect little treats for all peanut butter lovers. These are also high in protein and low in carbohydrates so would fit well after your big Christmas dinners.This is a simple nourishing snack which is done in minutes and actually taste better when stored in the fridge after baking.
You will need
2tbsp peanut butter ( I use Meridian smooth peanut butter), one cup of Sukrin peanut flour, 1 scoop of protein power (I recommend either phD, Myprotein or Gonutrition), ½ tsp of baking powder, ½ cup of almond milk ( I love Almond breeze unsweetened) 1tsp of coconut oil melted in microwave prior to mixing all together. one egg white or 1 full egg (optional).
Mix all ingredients together until a batter like texture and place on baking tray with a baking sheet. But the oven on at 180°C (gas mark 4) for about 10-20 minutes. Allow to cool, you can enjoy whilst its hot or add into the fridge I find it taste better also more fudge like.
